Butlered Hors D'oeuvres

*Crab Calloway
Fresh lump crab meat is lightly seasoned with lemon, fresh parsley, minced shallots, and a dash of seasonings, sauteed until golden, and served with Zesty Cocktail Sauce or Creamy Best Ever.

*Tommy's World Famous Coconut Shrimp
Crispy large shrimp encrusted with coconut and served with a sweet and sour dipping sauce..

*Big Island Goat Cheese Quesadillas

Warm macadamia nut crusted goat's cheese and mango salsa fill flour tortillas.


Cocktail Buffet Stations

Station I

Rum Runner's Fruit
Seasonal fruits to include berries and pineapple served with a tropical dipping sauce.

Dr. Mambo's Combo
Plantain crisps along with blue and yellow corn chips. Served with black bean salsa and lime sour cream.

*The Habana Cabana Sandwich
Pulled pork is touched with a light blackberry brandy Barbeque sauce and served with petite sweet potato rolls.


Station II

Mama Bahama's Seafood Teasers
Poached scallops, mussels, small shrimp and flakes of lobster in an lemon vinaigrette tantalize and tease the taste buds. The seafoods are served on a bed of baby greens in footed cordial glasses with silver tasseled cocktail forks.


Station III

*Boca Chica Chicken
A sweet marinade accented with ginger, honey, and Caribbean seasonings flavors the grilled, boneless chicken medallions.

*The Key West Cowboy

Our tender, prime New York Strip Steaks are 1-2" thick, grilled to medium rare, then thinly sliced for ease in eating. Brazilian mustard and homemade creamy horseradish sauce accompany the steaks.  The blackening spices can be omitted, if preferred.

Freshly Baked Breads
Sliced Cheddar-Jalapeno Bread, Petite Corn Muffins and Parker House Rolls are offered. Served with butter.

*South Seas Spuds

Mini red potatoes are baked, cut in half, stuffed with potato, chives, and sour cream. Topped with grated Cheddar cheese.

*Tommy's Great Grilled Vegetables
A beautiful arrangement of fresh grilled vegetables such as eggplant, zucchini, yellow squash, carrot, red onions, asparagus, parsnips, butternut squash, artichoke hearts or similar seasonal selections, tossed with virgin olive oil and fresh herbs.

Dessert

Pina Coloda Cupcakes
Moist vanilla cup cakes flavored with pineapple and rum, topped with white chocolate frosting and Macadamia nuts.

Barbados Brownies
Chocolate fudge brownies drizzled with caramel.

Key West Lime Tartlets

Papa Bahama's miniature version of this famous Key West dessert.

Beverages

Montego Bay Mojitos
Our special take on this traditional island libation.

Beer, Wine & Soft Drinks
Includes domestic regular and light bottled beer; white, red and blush wine; basic soft drinks, and sparkling water.

Alternative Menu Ideas

*Brie and Papaya Quesadillas
 Small wedges of flour tortillas are filled with fresh papaya and French Brie, warmed in clarified butter. Accompanied by raspberry preserves. This is a wonderful and different way to combine fruits and cheeses.

Fresh Mango Spring Rolls
Served chilled, these flavorful vegetarian spring rolls offer, mango, napa cabbage, ginger, and herb encased in rice paper. A Thai vinaigrette thickened with hoisin is offered for dipping.

*Old San Juan Shrimp and Pineapple Brochettes
Marinated large shrimp are laced with fresh pineapple, brushed with a light sweet and sour sauce, then cooked.

Treasure Quay Ahi Tuna
Sesame crusted seared Ahi tuna, layered with pickled seaweed salad, ribboned with sweet soy glaze and wasabi aoli. Served with wonton crisps.

*Chicken Roasted in Banana Leaves with Orange-Pineapple Relish
Roasting chicken wrapped in banana leaves is a Cuban kind of thing. The leaves keep chicken moist and impart a subtle banana flavor. Complimented with an orange-pineapple relish.

*Chicken with Mesa Barbecue Sauce and Wild Mushroom-Roasted Corn Relish
Tender chicken medallions are infused with sweet and spicy flavors as they are brushed with Mesa Barbecue Sauce. A relish of sweet corn and wild mushrooms accents the meat.

*Three-Citrus Grilled Chicken
Lemon, orange and lime juice; But that's not all.  Chopped fresh mint leaves and cinnamon are all added to this marinade to give this chicken dish flavor that dances.

*Tommy's World Famous Coconut Chicken
Chunks of boneless breast of chicken are marinated, tossed with an incredible mixture of coconut and caribbean seasonings and fried. Served with sweet and sour dipping sauce.

*Lime Grilled Chicken

 Light and luscious describes these tender pieces of boneless chicken breast splashed with lime, fresh oregano, and a touch of garlic. Served with a roasted red pepper aioli.

*Petite Sweet Potato Biscuits with Roasted Pork
A wonderful winter combination with caramelized onions.

*Ginger-Thyme Roast Pork
Such flavor!  Minced fresh thyme marinates the boneless pork loin roast overnight before adding thinly sliced onion and carrots, garlic cloves and more thyme sprigs.  Creamy Brazilian mustard sauce to accompany.

*Barbequed Texas Pork Loin
Pork loin is marinated with Mansion Barbeque Spices, roasted to medium, sliced and served with a cilantro cream sauce and our own creamy mustard sauce. 

*Sesame Soy Glazed Beef Skewers

A sprinkle of sesame seeds on the glazed beef is the perfect finish to the skewers topped by red pepper and scallion.

Fresh Made Bread
Our homemade Petite Jalapeno-Corn Muffins, Sliced Sour Dough Bread and Mini Heart-Shaped Cheddar Biscuits accompany the beef.

*Tropical Rice Pilaf
Toasted Macadamia nuts, coconut, golden pineapple and slivers of scallions make a delightful combination.

Berry Colada Punch
Island flavors of Coconut and Pineapple are colored with Strawberries.
