Cocktail Buffet Stations Reception
Station I
Assorted Fresh Fruit Display
The sweetest fresh fruits available such as berries, melon, kiwi, Hawaiian jet pineapple, orange slices, seedless grapes, and other seasonal fruits are beautifully arranged and garnished with fresh flowers and greens.
Gourmet Cheese Display
An assortment of fresh imported cheeses will include French Brie, Port Salut, Doux de Montagne, Pyrenees with Peppercorn, Gourmandise with Walnuts, Saga Blue, or other double and triple creme semi-hard cheeses, accompanied by selected gourmet sweet and savory crackers.
Station II
*Chicken Marsala
Boneless chunks of chicken breast are floured, sauteed in virgin olive oil, and placed in a pan which is deglazed with chicken stock and Marsala wine. The chicken simmers in the sauce and is studded with sauteed fresh mushrooms and spring onion slices.
Tenderloin on Horseback
Thinly sliced marinated beef tenderloin roasted to medium-rare and served on a crouton brushed with a creamy Caesar dressing and topped with arugula and shaved Parmesan cheese.
*Petite Garden Risotto Cakes
Rich, creamy risotto is infused with the fresh flavors of herbs and delicious vegetables. Roasted grape tomatoes and a brunoise of yellow pepper dots this collection of petite cakes.
*Grilled Marinated Green Beans
Fresh green beans are brushed with seasoned oil; grilled; then dusted with fresh herbs.
Station III
Seafood Martini
Offered from a beautiful silver bowl, this combines poached scallops, small shrimp and flakes of lobster in a lemon vinaigrette. The seafood salad is offered in a martini glass on a bed of mixed greens with a cocktail fork.
